Not sure about iMac purchase help please

hello,
apple enthusiast , love love love of apples products.

last 1 brings me new question. have older model imac (previous newer one) , want upgrade newer 1 , give older 1 mom birthday next month. know , not get. options right either 21.5-inch: 2.5ghz or 21.5-inch: 2.7ghz. know people may go 27 inch model size not me , don't need of power. money not problem isn't stopping me buying top of line because apple imac's top of line.

question: need? use cs5 master collection , pretty use every program on it. use final cut , iwork. internet surfing quite lot , itunes library stored on our home servers hard drive space isn't problem. 32,000 songs , 233 movies. if not in position use? know if think there difference in 2.5 2.7 ghz?

have imac, 2 mac servers, mac book pro.
, if wondering second server is home theater , 1 our computers.

What's the max amount of RAM an iMac can have to run BootCamp & Parallels Windows 7?
