Setting up wifi with multiple bases, advice sought

i have been trying cover large house , been using airport express n wifi units using 1 extender, has produced disastrous results (poor speed , repeater kept crashing). have pulled cat5 in can feed both units cable router.

question is; should set them same ssid , same or different channels or set 2 discrete networks? may add third ap in future.

advice on appreciated info in apple online spartan least!
 

connection sharing in "off (bridge mode)"
same ssid
same security settings
different channel.

bridge mode make stuff connected express behave it's connected extreme, devices able talk on network.
